Chilli Con Carne

Serves 4

Great for batch cooking

Ingredients

·       400g lean beef mince

·       400g tinned tomatoes (1 x can)

·       1 x tablespoon tomato puree

·       1 x teaspoon olive oil

·       1 x onion (chopped)

·       100g mushrooms (sliced)

·       2-4 garlic cloves

·       300ml stock (1 x beef stock or low sodium stock)

·       400g kidney beans (1 x can)

·       240g dried rice (boil, 60g per serving)

·       2 x teaspoons of chilli powder

·       1 x teaspoon paprika (optional)

·       2 x teaspoons of cumin (optional)

 

Method

1)    Fry onions and mushrooms on a low heat and add mince. Fry until cooked through

2)    Add garlic and spices and cook for another 2-3 minutes and stir through

3)    Add tinned tomatoes, tomato puree and stock

4)    Stir and bring to the boil then simmer on a low heat for a further 20 minutes

5)    Add kidney beans and heat through

6)    Serve with rice

Optional; garnish with fresh coriander
