Cottage Pie

Serves 4-Perfect for batch cooking

Ingredients

·       450g lean minced beef

·       1 x teaspoon olive oil

·       1 x onion (chopped finely)

·       2 x carrots (sliced)

·       1 x cup of peas

·       1 x cup of mushrooms (sliced)

·       80g broccoli

·       5 x potatoes-boiled

·       1 x low salt beef stock cube

·       275mls water

Method

1.)   Pre heat oven to 180 degrees Celsius

2.)   Fry the mince on a pan. Add the vegetables and fry all together until the mince is cooked through

3.)   Dissolve the stock cube in boiling water and add to the pan. Bring to the boil and stir

4.)   Place the mixture in a large oven dish.

5.)   Mash the potatoes and spoon on top of the mince and vegetables

6.)   Bake in the oven for approximately 45 minutes
