Winter Warmer-Vegetable Soup
Serves 4
Preparation time: 15 minutes
Ingredients
3 carrots
1 turnip
1 parsnip
1-2 leeks
1 onion
4 x garlic cloves
1 x tin of tomatoes
1 teaspoon of olive oil
1 low sodium stock cube
700mls boiling water
Method
1. Dice the carrot, parsnip, turnip, leeks and onion
2. Deat the oil in a large saucepan
3. Gently fry the onion and garlic
4. Add the carrot, parsnip, turnip and leek and gently fry
5. Dissolve the stock cube in the boiling water
6. Bring to the boil and stir continuously
7. Add the tinned tomatoes, cover and allow to simmer for 45 minutes
8. Once the vegetables are soft blend with a hand hend blender or food processor
Allow to cool and refrigerate for up to 3 days
Consider adding chickpeas/kidney beans to include a protein source
