Turkey Fajitas  

Serves 4

Ingredients

400g lean turkey breast cut into strips (or chicken/beef)

4 x peppers (diced or cut into strips)

1 x large onion

Marinade

1 tablespoon olive oil

1 tablespoon smoked paprika or fajita seasoning

2-3 garlic cloves (diced)

Homemade Salsa (or jar if stuck for time!)

200g cherry tomatoes-finely chopped

1 x red onion-finely chopped

Juice of 1 x Lime

Handful of fresh coriander chopped (optional)

To serve (optional)

Low fat sour cream

Guacamole (mashed avocado with lime)

Tortilla Wraps  

Method

1.)   Pre-heat oven to 200 degrees Celsius

2.)   Add the turkey, peppers and onion to large bowl and add marinade. Heat a large pan and add the turkey/peppers/onion/marinade mixture.

3.)   Stir fry until the turkey is cooked through

4.)   Wrap the tortillas in tinfoil and place in oven for 5-10 minutes

5.)   Combine the salsa ingredients in a bowl

6.)   Serve up
