Homemade Granola

Serves 6 (148kcal, 3.8g protein per serving)-budget friendly

Ingredients

·         90g oats (6 x 15g red scoops included in instant oats container)

·         45g mixed nuts (of choice-walnuts/almonds/cashew nuts/pecans)

·         2 x dessertspoons olive oil

·         1 x egg white

·         Half teaspoon of vanilla essence (optional)

·         Half teaspoon of salt (optional)

·         3 x tspns honey

·         3 x teaspoons honey

Method

1) Preheat oven to 160 degrees Celsius (or use the air fryer)

Add oats, mixed nuts, cinnamon and salt in a large bowl

2) In a cup mix the olive oil, egg white, honey and vanilla essence

3) Add the olive oil mixture to the oats and mix all the ingredients well

4) Bake in the oven for 20-25 minutes until golden brown or alternatively bake in the air fryer for 15-20 minutes

Allow to cool and store in a jar or lunchbox. Add to yoghurt and berries/fruit as a breakfast or snack or add to stewed apple and serve with custard for a more nutritious apple crumble
