Pesto Chicken
Serves 4
Ingredients
4 x chicken breasts
1 x tablespoon olive oil
1 x onion (chopped)
2 x garlic cloves (crushed/finely chopped)
1 x tablespoon pesto (15g)
200g cherry tomatoes
400ml low fat crème fraiche
200g dried rice (boiled)
Method
1.) Cook rice in boiling water while preparing the chicken
2.) Heat olive oil in a pan on a medium heat. Add the chicken until all sides are browned
3.) Add the garlic, onion, pesto and tomatoes and cook until tomatoes are softened
4.) When the chicken is cooked through (check white in middle), stir in the crème fraiche and stir all ingredients
5.) Serve on a bed of rice
