Fish Tray Bake
Serves 4
Ingredients
· 4 x 120g fillets of fish of choice-cod/hake/salmon/seabass
· 800g baby potatoes (cut in halves)
· 2 x red peppers (chopped)
· 1 x courgette (sliced)
· 200g tomatoes
· 2 x tablespoons olive oil
· 4 x garlic cloves
Dressing (optional)
· 4 x tablespoons Greek yoghurt
· Juice from half a lemon
· 2 x teaspoons honey
· 2 x tablespoons of dill
· 1 x teaspoon olive oil
Method
1.) Preheat oven to 200 degrees Celsius
2.) Spread potatoes and vegetables on a large baking try (line with grease proof paper) and drizzle the olive oil over them
3.) Cook for 20 minutes
4.) remove and add fish on top of vegetables and potatoes. Cook for a further 20 minutes until all is cooked through
while the fish is cooking add the dressing ingredients together in a bowl and mix well. Spread over the try when cooked and serve up
