Porridge Bread

 

Serves 12

Ingredients

500ml (large tub) low fat natural yoghurt

360g porridge oats (fill 2 x containers of the 500ml yoghurt tub)

2 teaspoons of bread soda

half teaspoon of salt

1 x egg

1 tablespoon milk

Method

1.     Preheat oven to 180 degrees Celsius

2.     Place bread soda, salt and natural yoghurt in a mixing bowl and stir

3.     Add in the oats and stir until all ingredients are well mixed

4.     Crack the egg in a separate bowl and beat until fluffy

5.     Add the egg and milk with the rest of the ingredients and stir

6.     Line a bread tin with parchment paper and add in the mixture

7.     Bake for approximately 50 minutes

8.     Test with a knife to see it is cooked through

Remove from the oven and leave to cool

Optional; Add pumpkin seeds to the mixture or sprinkle on top

Serve with some of the chia jam recipe as a snack
