Egg Fried Rice

Super quick and easy recipe

Ingredients

·         200g rice (dried)

·         150g frozen peas

·         2 x eggs

·         1 x red pepper (diced

·         5 x spring onions sliced (or 1 x regular onion diced)

·         2 x garlic cloves (finely chopped)

·         2 x tablespoons olive oil

·         3 x tablespoons reduced sodium soy sauce

·         2 x teaspoons of five spice powder (optional)

·         50g cashew nuts (optional)

Method

1.       Cook rice and frozen peas as per packet instructions and beat the eggs while there are cooking

2.       Heat 1 x tablespoon of olive oil on a medium heat. Add the 2 eggs and cook for approx. 2-3 minutes. It should look like an omelette. Remove and cut into slices

3.       Add the rest of the oil along with the pepper, onion and spices and stir fry until cooked

4.       Reduce to a low heat and stir in the soy sauce, egg and peas. Mix all together and cook for another 2-3 minutes

5.       Finally serve on a bed of rice and top with some cashew nuts
