Red Lentil Dahl

Serves 4

Ingredients

·       100g dried Red Lentils

·       1 x Tin of Tomatoes

·       1 x Large Onion

·       2-4 Garlic Cloves (chopped finely or crushed)

·       3 x Carrots (sliced)

·       150g frozen peas

·       1 x Dessertspoon olive oil

·       1 x Dessertspoon of curry powder

·       2 x Teaspoons of Turmeric

·       120g Dried Rice to serve

Method

1.)   Cook the lentils in a separate saucepan allowing to simmer on a low heat adding 1-part lentils to 2 parts water (approximately 1 cup of lentils to 2 x cups water)

2.)   Lightly fry the onions, garlic and carrots in olive oil on a medium heat

3.)   Add the frozen peas

4.)   Add the tin of tomatoes and allow to simmer on a low heat, stirring occasionally for approximately 15-20 minutes

5.)   Add the curry powder and turmeric

6.)   Serve on a bed or rice
